SoBro Pizza Co.



Sobro is started by Mon and Gerry Shirley of Mon Thai Bistro , formerly of Bon du Mon Ami and Paul Hughes formerly of The Park Motel Cafe. These talented folks will bring their experience and vision to the South Broadway area by The Pearl. The SoBro name comes from "South Broadway" which is the area that changes every month with something new. If you haven't seen this area in a while, you will be impressed with all the development that has transpired over the past few years. They have trained according the rules of Associazione Vera Pizza Napoletana which require certain ingredients and techniques on how to cook which is quite impressive. 

A few things to know about Neapolitan Pizza because I didn't know anything until I did a little research on it. For one the gas-fired oven cooks this pizza extremely fast once its in, around 2 minutes. Its not what you are use to, you may have to use a fork and knife. Margherita of Savoy was the Queen of the Kingdom of Italy from January 9th 1878 to July 29th 1900. The Margherita Pizza was named after her and the colors of red tomatoes, green basil and white cheese represent the color of Italy's flag. Sobro will open up soon after San Antonio's Fiesta Holiday's are over. 

Margherita Pizza
Walking in we were greeted by Julie Ord , who is their social media guru and the person who invited us here. The Margherita Pizza was just coming out and we were the first ones there. Was handed a menu which is not currently out yet. Being a pizza connoisseur, I'm not familiar nor have I ever eaten Neapolitan style pizza. Sobro uses the freshest ingredients possible and you can tell with every succulent bite of the Margherita Pizza. Very light and not doughy to way you down. Crust was crisp and airy. Was really impressed with everything about this pizza. 

Pepperoni Pizza
Yes, they do a classic pepperoni pizza and although it was good, I would order something different because of their unique menu and what it has to offer. Ingredients were good but I'm not use to having cheese and pepperonis slide off. Maybe I should have used a knife and fork instead? None the less it was delicious. 

FigJam Pizza
The FigJam which are Sweet Figs, Gorgonzola, Arugula and Prosciutto was our favorite of the three we tried and the "star" of the show. The sweetness of the Figs combined with the saltiness of Gorgonzola and followed by Prosciutto make for one exciting pizza to try. We actually went back for seconds on this one.

Sobrohs 
These are doughnut shaped calzones. I got the Quattro Formaggi which has the ingredients of Mozzarella, Ricotta, Parmesan and Gorgonzola cheese.Bread is fresh and the "Doughnut" is cut into fours which comes with marinara dipping sauce. This was extremely delicious to say the least.


My Thoughts
Was really impressed with this place and you can tell this isn't their first Rodeo. They will be selling craft beer, eight to be exact and will change them up from time to time. They do sell wine to drink or you can buy a bottle before you leave. There is more than just delicious pizza to their menu. Something that caught my eye was the "SOBROHS" Which are doughnut shaped Calzones! The Quattro Formaggi is calling my name on my next visit! They also will serve soup, Anitpasto, Sandwiches, Salads and will have a Gelato Bar. Pricing is very reasonable for what you get considering you are only 1-2 blocks away from the restaurants at The Pearl. The staff that was on hand for this event made their rounds constantly to check for drink refills and you can tell went though a lot of training for great service. Cant wait for my next visit.
